Ⅵ. What's Rhamnose
Rhamnose is a naturally occurring deoxy sugar. It can be classified as either a methyl-pentoseor a 6-deoxy-hexose. Rhamnose occurs in nature in its L-form as L-rhamnose (6-deoxy-L-mannose).
Rhamnose is also called α-L-Rhamnopyranose, 6-Dexoxy-D-mannose, 6-Deoxy-L-mannose, Isodulcite, L-Mannomethylose. Most of Rhamnose in nature is L-Rhamnose, existing in plants as the types of Polysaccharides, glycosides, plant gum and bacterial polysaccharides.
Rhamnose is a methyl pentose sugar and has properly been classified as one of the rarer sugars. This sugar is a constituent of many glycosides. The rhamnoglycoside of quercetin (rutin) has been most often used as a source of rhamnose and after its hydrolisis, it yields the aglycon and L-Rhamnose Monohydrate. L-Rhamnose Monohydrate obtained by this method is a very pure crystalline powder, free from any visible impurities.
Rhamnose finds use in the flavor industry as a starting material for the production of furanones, as wel as the starting raw material in reaction flavors developed during the preparation of various foods such as bread, grilled meats, etc
Rhamnose appearance: White-crystal or white-crystal-powder;
Rhamnose solubility: soluble in water and methanol, slightly soluble in ethanol, shows in two types:α & β.
Rhamnose type α contains a molecular water of crystallization,it will transform into type β(M.W.: 164.16) after dehydration by heating.
Rhamnose type β with hygroscopic character, it will transform into type α after moisture absorption in the air.

1. Production of cardiac drugs–The active components of cardiac drugs are often linked to L-Rhamnose, making it a raw material for production of these medicinal compounds. However, synthetic drugs are still in the research and development phase, and are yet to arrive in the market.
2. Synthetic spices–The synthetic aroma Furaneol is made using this sugar. The compound itself holds an important place in the fruity spice product industry.
3. Food additives–Being similar to ribose and glucose, it produces tasteful substances mixing with other food substances. These are responsible for developing five different species of flavor.
4. Biochemical reagents–These are used in various experiments and procedures in research and other laboratories.
